Balsamic Chicken with Mushrooms and Spinach

Ingredients

  • 1.3 lb. boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 14 ounces mushrooms
  • 2 cloves garlic, minced
  • ½ tablespoon rosemary, chopped
  • ¼ cup chicken broth
  • 2 tablespoons balsamic vinegar
  • 2 cups spinach
  • Salt and pepper

Directions

Cut chicken into pieces and season with salt and pepper. Heat olive oil over medium-high heat in a large nonstick skillet for 2-3 minutes. Add chicken to skillet and sear chicken on both sides, about 2-3 minutes per side.

Remove chicken and set aside.

Add mushrooms, garlic and rosemary to skillet and reduce heat to medium. Cook for 3-4 minutes or until mushrooms are soft. Then add chicken broth and balsamic vinegar to skillet to deglaze the pan. Finally, add chicken and allow to simmer for 7-10 minutes on low heat. Turn off heat and fold in spinach until wilted.

Serving Suggestion

To keep this meal low carb, consider adding an additional low carb side like roasted asparagus or broccoli. If your daily plan calls for a serving of high carb, consider pairing with roasted sweet potatoes or quinoa. Top with fresh parsley and enjoy!
